Olive and Parmesan Chicken Balls
Premium chicken mince (roughly ½ kilo)
Finely diced onion
Finely diced or minced garlic
Heaps of grated parmesan – ½ to 1 bag
Small container of Kalamata black olives – finely diced
Mix really well (use bread crumbs to create the correct consistency for making balls) and then roll into meatballs using a little flour.
Shallow fry meatballs (approx 5-10 mins per side) and drain on paper towels.
Great served with a tomato chutney/relish or any other sauce you like….
